Not only are these uchpuchmaki fun to say, they are fun to make too! Enlist the kids to help fold the dough into little triangles of meat and potatoes. Experiment with yogurt, hot sauce or other dipping ideas. You can use ground lamb or beef, depending on your preference. Get ingredients!
Prepare the dough: Combine butter, milk, yeast, and sugar in a large bowl. Let bubble about five minutes, then stir in flour. Mix; add more flour if necessary to make a pliable dough. Cover and let rise about 1 hour, until doubled.
Meanwhile, prepare the meat filling. Combine the lamb, potatoes, onion, green onion, garlic, oil, and spices in a medium bowl.
Preheat the oven to 325 degrees. Punch the dough down and cut into small pieces and roll into approximately 4″ rounds; fill with a tablespoon or two of meat filling. Pinch edges to seal. Place on cookie tray and brush with beaten egg. Once the tray is filled, bake for about 25 minutes or until golden. Enjoy!
