Ingredients:
2-3 garlic cloves
1 onion
4 carrots
1 lb ground beef or lamb
1 small butternut squash or 2 sweet potatoes
3 T peanut butter
1 14 oz can tomatoes
2 C water or stock
3 T yellow curry powder
2 tsp salt
Directions:
Saute meat with part of the onion in a skillet. Drain if necessary. Saute veggies in a heavy bottomed pot or Dutch oven. When the onion is nearly translucent and the carrots are tender, add the meat, salt and spices. Continue cooking until everything is blended and spices release their scents. Add tomatoes, water or stock, peanut butter and squash. Simmer for 1 hour or even longer. Even more delicious the next day. Serve over rice, or even better, cook rice and quinoa together for an especially nutty and protein-rich pilaf.
