This stew is perfect for a busy weeknight when you need a shortcut. Lamb wieners are fully cooked so all you have to do is slice and toss in the pot! Red cabbage, tomatoes, onions and garlic provide veggies for a healthy one-pot meal. If you want, you can add a green salad for a serving of green vegetable. Grassfinished lamb wieners are nitrate and nitrite free, too. It’s good for you and tasty too! You can find lamb wieners and in-season produce in our online farmers market.

1 onion

4 cloves garlic, chopped

1/4 -1/2 med head of red cabbage, sliced

1 15oz can of diced tomatoes

4-5 lamb wieners, sliced

Salt and Pepper to taste

 

In a heavy-bottomed pot or dutch oven, saute the onion for several minutes. Add the garlic and cook for a couple of minutes. Next add the cabbage,  tomatoes and lamb. Stir to combine, cover and let simmer for 10-20 minutes, stirring occasionally and adding water to prevent sticking until cabbage is tender. Add salt and pepper to taste. Serve and enjoy!
